During the school year you can check out Latin Scrabble boards from me. Although it can be stressful to play "for real," consider playing without points, with dictionaries in hand, and with 9 tiles instead of 7. You could also play on your own, challenging yourself to use all of the tiles. One easy way to record your playing is to take a picture of the completed board. You can also make your own Scrabble board and tiles--or even just the tiles and play without a board.
The Latin set has:
11 tiles with E, I
9 tiles with A, R
8 tiles with S
7 tiles with T, U
6 tiles with N
5 tiles with M, O
4 tiles with C
3 tiles with D
2 tiles with B, L, P, V
1 tile with F, G, H, Q, X
2 blank tiles
I don't know of an Ancient Greek version, but the Modern Greek Scrabble set has:
12 tiles with alpha
9 tiles with omicron
8 tiles with epsilon, iota, tau
7 tiles with eta, sigma
6 tiles with nu
5 tiles with rho
4 tiles with kappa, pi, upsilon
3 tiles with lambda, mu, omega
2 tiles with gamma, delta
1 tile with beta, zeta, theta, xi, phi, chi, psi
2 blank tiles
